Of the 830 million olive trees grown in the world, 90% are located in the Mediterranean basin. The Provence Alpes Côtes d’Azur region accounts for 70% of the national production of olive oil, 15% of which is covered by the Var.
Olive trees take 5 to 6 years before producing any fruit and about 30 years before they produce at full capacity. There are no black or green olive trees, the color depends on the time of harvest. The olive fruit turns from green to black as they ripen.
