This variety represents about 20% of French olive trees and has good resistance to cold. It is the main variety of the AOC Haute Provence. The oil from the Aglandau is smooth with a great aromatic richness (predominantly artichoke). This vibrant green oil is very fruity and ardent and reveals a powerful flavor on the palate.

This variety is most often found in AOC Aix en Provence and Baux de Provence. It possesses a good resistance to cold as well as to insects. The olive oil obtained with the Salonenque is sweet and limpid with fruity flavor and aromas of green apples and freshly cut hay.
